Stress Baking Series: Snowballs Recipe

Well, it isn’t quite a snow day (or month or week) but it sure feels like it. What the heck, let’s make snowballs. These cookies are an expected delicacy during my family holiday season but they are always a welcomed surprise throughout the year.

Your kids will be rolling them in powdered sugar after they come out of the oven, just like my sister and I did back in the olden days:) Don’t forget, you can freeze the dough or the cookies (just let them get to room temperature before your roll them in sugar).

Be forewarned, these little bites of heaven are addicting, and they just might go great with a little Irish coffee.

Use a good quality butter!  It will make all the difference.

Use toasted pecans.  Toasting really amps up the flavor of the nuts.

Have butter at room temp. 

If mixture won’t hold a ball shape, add a few drops of water until desired consistency.

The dough can be made ahead of time and frozen.  You can even freeze the balls before baking. 

The cookies can be baked and then frozen.  Wait to roll in powdered sugar until the cookies are at room temperature.
