- Preheat oven to 350° and line baking sheet with parchment paper.
- In a small microwave safe bowl, melt butter in the microwave. Heat on high at 15 second bursts until melted.
- In a large bowl, combine sugar, flour, and almonds.
- Add remaining ingredients and mix well.
- Drop by spoonful onto parchment paper lined baking sheet. These cookies spread as they bake for leave two inches between cookie dough.
- Bake for 10-12 minutes, depending on size of cookie.
- Remove from baking sheet and allow to cool completely on cooling rack.
- Store cooled cookies in a Ziploc freezer bag or in a cookie tin.
Notes
Be sure to line the baking sheet with parchment. It will make clean up and removing the cookies from the baking sheet so much easier.
