Chocolate Bundt Cake

Great weather and postponed weddings have filled my wedding calendar this spring. I don’t have a quiet Saturday in sight, but it is great to be back in the studio kitchen making gorgeous wedding cakes for my couples. So many designs have sat dormant in my files and now I am pulling out the fondant and sugar. It feels great to be making flowers and cake and being creative. The best part is baking to celebrate others!

With Mother’s Day on the horizon, I can hardly thing of anything but relaxing. I am going to ask my daughter to make this yummy chocolate mayo cake for me. It is easy and looks so pretty on my new plates. Thinking about ice cream or whipped cream on top…that will be game time decision.

  • Yes, you read it right…mayonnaise!  I promise you will never taste it and if you don’t tell, no one will know.  Mayonnaise is made with eggs and oil and that is exactly what it replaces in this recipe.
  • This cake doesn’t need a frosting.  A light sprinkling of powder sugar adds a nice touch.  It’s also great served with a dollop of freshly whipped cream.
  • If company is coming, drizzle a little warm ganache over the cake for a fancy presentation.
  • Coffee can be replaced with water.  The coffee does enhance the chocolate.
